

Buying Bulk Beef - How the Process Works
So you've decided to buy bulk beef. Great choice! Here's what you can expect:

How the process works:

A non-refundable deposit is required to reserve your beef. $500 for a whole beef, $250 for a half beef, and $250 for a quarter beef.

Following your order, an appointment will be made with the facility for USDA inspected processing. You will be notified by email when your beef appointment is scheduled and the tag number of your animal. The animal will be delivered to the processor by 9 AM the morning of the appointment. At the time of animal drop-off, your contact information and your animal (by tag) will be relayed to the processor. We will receive the hanging weight typically by the end of that day and you will be notified by email of the hanging weight and the remaining balance due. For wholes and halves, the processor will contact you within 1-3 days of the appointment to go over and fill out your cut sheet. For quarters, the standard Sunny Blue Ranch cut sheet will be utilized. If you have not received a phone call from the processor by the 4th day after your appointment, please contact the processor directly at the number below. If you choose not to fill out a cut sheet, please let us know, and the standard Sunny Blue Ranch cut sheet will be utilized and no modifications will be permitted after submission.​

The beef will hang/age for 7 days at the processor, after which processing will occur according to the cut sheet. Once complete, we will be notified and your delivery will be scheduled based on the processors weekly or monthly delivery routes. Final payment will be due to Sunny Blue Ranch prior to delivery of your beef.

Example of how costs are calculated:
Once the animal is dispatched, the head, hide, hooves, and internal organs are removed. The carcass is then weighed. This is the hanging weight (also called “hot carcass” weight). Our pricing is $6.50/lb based on this value. On average, you would expect to get 60-64% yield from live to hanging weight. Example using 62% yield for an 1100 lb steer is 1100 lbs x 0.62 = 682 lbs. Next, 682 lbs x $6.50/lb = $4,433 for this whole beef. A ½ beef would be $4433/2 = $2216.50, and ¼ beef would be $4433/4 = $1108.25 for this particular beef. Now, this is not an exact price for YOUR beef as the actual weight and yield of each animal will vary.

After deposit, the balance due for this whole beef would be: $4433 - $500 = $3933 prior to delivery.

*Please note, the hanging weight is not the amount of beef in the final product. There is further reduction in weight due to deboning, trimming, and some drying out associated with processing.*
